Meet Your Dietitian

Helping you enjoy the harvest.

Kathleen’s passion for nutrition began with a personal realization: food had a meaningful impact on how she felt, functioned, and experienced daily life, with nourishing, whole foods contributing to improvements in mood, energy levels, and her overall sense of well-being. This personal connection to diet and nutrition became the foundation for her career in nutrition and public health.

With a Bachelor of Science in Nutrition from Bastyr University, a Dietetic Internship completed through Mississippi State University, and a Master of Public Health from the University of Washington, Kathleen brings a strong foundation in both clinical nutrition and public health to her work. Her experience has included nutrition care across the lifespan, with a consistent focus on meeting people where they are, honoring culture, lived experience, personal goals, and the realities of daily life.

Through Persephone Nutrition, Kathleen offers evidence-based care to help you make healthy choices that are practical, enjoyable, and sustainable.

The Story Behind the Name

Persephone’s mythology inspires our holistic nutrition care philosophy.

In Greek mythology, Persephone is associated with spring, vegetation, and the seasonal cycles that shape growth. The name reflects the way health often changes through seasons of effort, rest, renewal, healing, and gradual transformation.

Healthy change is not about perfection, restriction, or punishment. It is about cultivating habits, routines, environments, and support systems that are realistic enough to sustain and enjoyable enough to become part of everyday life.

The goal is not simply to make healthier choices, but to build a way of living that tastes good, feels good, enriches daily life, and allows people and communities to experience the benefits of the changes they have worked to create. “Enjoy the Harvest” speaks to what sustainable nutrition care should ultimately make possible: greater health, greater confidence, greater enjoyment, and a healthier relationship with food and well-being.
